If you want to make a full brunch, go and see my pancake recipe, and come back here during the resting time! Else, mince the garlic, and put it in a pan with the olive oil at mid-high heat (about 5/6). Chop the onions and add them in the pan when the garlic becomes light brown (as in the picture).

While the onions cook, chop the mushrooms. They will reduce a lot while cooking, so don't cut them too small: 2-3cm wide is fine. When the onions begin to color (as in the picture) add the mushrooms. I didn't put the mushrooms on the picture because you would have seen no onion piece!

Stirr every 3-5 minutes. You may need to add some olive oil. When the mushrooms become brown, you can reduce the heat (1/6 is enough). Keep at low-heat for about 15 minutes, you don't need to stirr now. (If you are making pancakes as well, the dough should have rested by now, it is time to cook them!)

You can now cook the bacon. Put a pan at maximum heat with the oil (the oil enables the bacon to be crispy but not burnt). When it is steaming hot, reduce slightly the heat (at 5/6) and put the bacon slices. When you see the sides becoming golden brown, turn them. Put them on a plate a little bit before they've reached favorite cooking: they so hot they'll keep cooking a bit.

Put a pan at mid-high heat (still the good old 5/6). Break the eggs in a bowl (you may want to just crack the yolks). Prepare two pieces of butter of 15g each.

When the pan is hot, put a first piece of butter, and when it's almost melted, add the eggs. Start IMMEDIATELY to beat them with a fork – beware not to scratch you pan. Leave the pan on the stove for 20 seconds, then remove it for 10 seconds, and repeat (you're still beating all the time: you don't want any egg to cook at the bottom of the pan for scrambled eggs).

When the eggs are almost cooked, but still quite wet, add the second piece of butter. Mix out of the stove until the butter is melted. Like for the bacon, put them on a plate while they are a bit under-cooked: they are so hot they will keep cooking a bit.
